So it has been another 30 to 45 minutes and my toe was ready to appreciate after tube stretch unfolds, so flour your work surface and tip out the dough very gently. Now divide your dough into two equal sized pieces. It does not have to be accurate but the recipe says to bread of 750 grand each. Now we're going to do a very simple reshape, basically you take all the edges and fold them into the middle and then you turn it over. And we're going to do that with this second row as well. Now bench scraper and create a little bit of tension in your toe by turning your dough around with your bench scraper and pulling it towards you.

So it creates a little bit of tension. It's called a tension pool. Remember this is just a pre shape and you don't want to overdo it and risk of ripping your dough and remember to put that little bit of love into the dough by padding it. Now cover your dough with a tea towel and leave it to rest for 20 minutes and we are ready for shaping
